The Deer Behind the Meat
We harvest roe, fallow, and red deer from woodlands and estates across the South West and Scotland. Each cull is part of a structured game management plan, helping prevent overgrazing and damage to crops and forests.
From Stalk to Steak
After a humane harvest, deer are field dressed and transported to our larder where they are hung, butchered, and frozen to preserve peak flavour. Every cut – from saddle to sausages – is handled with care and skill.
Wild Boar
Wild boar offers a deeper, more intense taste than pork. These animals forage naturally, giving the meat a dark, nutty quality that works perfectly in ragùs, sausages, and BBQ dishes. Sustainably hunted and expertly butchered.
Wild Rabbit
Lean, light, and full of old-world charm, wild rabbit is making a well-deserved comeback. It’s a traditional British meat that’s low in fat, high in protein, and perfect for slow cooking, casseroles, and rustic pies.
